Carrot And Pepper Soup - cooking recipe

2 Tbsp. olive oil
1 medium onion
1 1/2 tsp. cumin seed
1 large sweet potato, peeled and sliced
3 medium carrots, sliced
1 red bell pepper, cored and sliced
1/2 to 1 hot chile pepper, minced
4 c. chicken broth, divided
3 Tbsp. whipping cream
juice of 1/2 lime
salt and pepper to taste
Preparation

Heat oil in large saucepan over medium high heat.
Add onion and cumin seed.
Cook, stirring often, until onion is soft, about 10 minutes.
Add sweet potato, carrots, bell pepper, hot pepper and 3 1/2 cups broth.
Cover and heat to boil.
Reduce heat and simmer until vegetables are tender, 20 to 25 minutes.
