Ingredients

1 c. sifted flour
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. unsalted butter
1/2 c. granulated sugar
1 tsp. grated lemon rind
2 eggs, separated
1 1/2 c. apricot jam (18 oz. jar)
1/4 c. granulated sugar
1/2 c. finely chopped walnuts
Preparation

Heat oven to 350\u00b0.
Grease a 12 x 9 x 2-inch pan.
Sift together flour, salt and baking soda.
In large mixer bowl (set at medium or cream), beat shortening with 1/2 cup sugar and lemon rind until very light and fluffy.
Add egg yolks, one at a time, beating well.
Add flour mixture, mixing well.
Over bottom of pan, pat dough in even layer.
Cover with apricot jam.
