Sausage Polenta - cooking recipe

Ingredients
    1/2 c. finely chopped onion
    1 clove garlic, minced
    2 Tbsp. salad oil
    1 (1 lb.) can tomatoes (2 c.)
    1 (6 oz.) can tomato paste (2/3 c.)
    1 (3 oz.) can broiled sliced mushrooms with liquid (2/3 c.)
    salt and pepper
    1/2 tsp. oregano
    1/2 c. grated Parmesan cheese
    1 box corn muffin mix
    1 (8 oz.) pkg. Brown 'N Serve sausage
    1/2 c. shredded sharp process cheese
Preparation
    Note:
    You can use 1/2 jar spaghetti sauce instead of tomatoes, tomato paste and mushrooms.
