Chicken Stir-Fry - cooking recipe

Ingredients
    1 lb. skinless and boneless chicken breasts, cut in strips
    1 c. broccoli flowerets
    1 c. very thin carrot strips
    1/2 c. onion, chopped
    1 can condensed cream of broccoli soup
    2/3 c. water
    2 tsp. soy sauce
    1/4 tsp. ginger
    4 c. hot cooked rice
Preparation
    Spray nonstick skillet with vegetable cooking spray.
    Heat 1 minute.
    Stir-fry chicken in two batches until browned.
    Remove from skillet and remove skillet from heat.
    Spray skillet with cooking spray.
    Add vegetables and stir-fry until tender crisp. Add soup, water, soy sauce and ginger; heat to boiling.
    Return chicken to skillet.
    Heat through.
    Serve over rice.
    Yields 4 servings.
