Italian Squash Bites - cooking recipe

Ingredients
    8 (1-inch) slices yellow squash (about 3 medium)
    8 (1-inch) slices zucchini (about 2 small)
    vegetable cooking spray
    3 Tbsp. tomatoes, peeled, seeded and diced
    2 Tbsp. diced yellow bell pepper
    2 Tbsp. shallots or green onion, finely chopped
    1 Tbsp. ripe olives, chopped
    1/2 tsp. dried whole basil
    1/8 tsp. dried whole oregano
    1/8 tsp. fresh ground pepper
Preparation
    Place sliced yellow squash and zucchini in a vegetable steamer over boiling water.
    Cover and cook 3 minutes.
    Drain and let cool.
    Scoop out pulp with small end of melon baller to within 1/4-inch of bottom of each shell.
    Discard pulp.
    Invert squash shells on paper towels.
    Set aside.
