Fish Roll-Ups - cooking recipe

Ingredients
    2 Tbsp. margarine
    2 Tbsp. flour
    1/4 tsp. paprika
    1 1/4 c. milk or light cream
    1 c. shredded Cheddar cheese
    grated peel and juice of 1/2 lemon
    1 (10 oz.) pkg. frozen spinach, chopped, cooked and well drained
    2 Tbsp. finely sliced green onion
    6 flounder fillets
Preparation
    Cheese sauce:
    Melt butter in pan; stir in flour, salt, pepper and paprika.
    Gradually add milk.
    Cook until thick.
    Add 1/2 cup of cheese, lemon peel and juice; stir until cheese melts.
