Zucchini-Nut Loaf - cooking recipe
Ingredients

1 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. baking powder
1 c. sugar
1 c. finely shredded, unpeeled zucchini
1 egg
1/4 c. cooking oil
1/4 tsp. lemon zest
1/2 c. chopped walnuts (optional)
Preparation

Mix all dry ingredients together.
Beat together sugar, egg and zucchini.
Add oil and lemon zest.
Mix well.
Fold in nuts. Turn batter into a greased 8 x 4 x 2-inch loaf pan.
Bake at 350\u00b0 for 55 to 60 minutes until wooden pick comes out clean.
Cool in pan 10 minutes.
Take out.
Cool thoroughly and wrap.
Best if stored overnight before slicing.
