Fishes Dipped In Six Perfumes(The Chinese Invented This One (It Says Here). Have Fun!) - cooking recipe
Ingredients
-
2 lb. whitefish fillets, cut into bite size pieces
lemon juice (to moisten)
1 Tbsp. onion pulp
water (to cover fish)
cayenne pepper
2 to 3 lightly beaten eggs
3 Tbsp. butter (plus enough to brown fish in)
5 Tbsp. soy sauce
1/2 tsp. sugar
1 to 2 tsp. cornstarch
pinch of powdered anise or mace
Preparation
-
Moisten fish with lemon juice.
Marinate in enough water to cover along with the onion pulp (you could pulp the onion directly with the water in a blender) for 2 hours.
Drain and reserve liquid.
Dust fish with a little anise or mace, then with cayenne. Dip
in lightly beaten eggs and fry to golden brown in butter. Remove fish to a hot platter.
Add 3 tablespoons butter to marinade and soy sauce in which the cornstarch has been suspended. Simmer until thickened.
Put in fish. Simmer 2 minutes. Remove fish to platter. Serve sauce separately.
