Smoked Sausage Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    2 c. broccoli flowerets (1 1/2 inches)
    1 medium green pepper, cut into strips
    1/2 c. diced celery
    1/2 c. sliced carrots
    1 small onion, sliced
    1 lb. beef smoked sausage
    1 medium tomato, cut into wedges
    2 Tbsp. soy sauce
Preparation
    Heat oil in large skillet.
    Add broccoli, pepper, celery, carrots and onion. Stir-fry over moderately high heat for 4 minutes.
    Add sausage, tomato and soy sauce.
    Cover and simmer 7 to 10 minutes, stirring occasionally.
    Serves 6 (1 cup) servings.
