New Orleans Red Beans And Rice - cooking recipe

Ingredients
    6 slices bacon, cut up
    2 onions, cut into 1/2 wedges
    1 clove garlic, minced
    1 c. beef broth
    1 c. rice
    1 tsp. dried thyme
    1 tsp. salt
    1/2 c. green bell pepper, diced
    2 cans red kidney beans, drained
Preparation
    Cook bacon, drain drippings, all but 2 tablespoons.
    Add onion and garlic and cook until tender.
    Add enough water to broth to make 2 1/2 cups.
    Pour into skillet and bring to a boil.
    Stir in rice, bacon, thyme and salt.
    Cover and simmer 15 minutes.
    Add green pepper.
    Cover and continue to cook for 5 minutes.
    Remove from heat.
    Stir in beans.
    Let stand, covered, until all liquid is absorbed.
