Ingredients

3 eggs
3/4 c. flour
1/8 tsp. salt
1 tsp. sugar
1 c. milk
1/2 tsp. vanilla flavoring

Preparation

Beat eggs lightly with electric mixer.
Beat in flour, salt, sugar, milk and vanilla.
Beat until batter is smooth and light. Let batter rest about 5 minutes.
Melt butter in heavy 12-inch skillet.
When hot, pour in 1/2 cup batter, tilting skillet to spread batter over entire bottom of skillet.
Cook until small bubbles form.
Turn; brown.
Slip onto plate; spread with butter and syrup and roll jelly roll fashion.
Makes 6 large pancakes.
