New Orleans Pralines - cooking recipe

Ingredients
    2 c. sugar
    1 c. firmly packed light brown sugar
    1 c. evaporated milk
    1/2 c. butter
    1 tsp. salt
    2 tsp. vanilla
    2 c. pecans (halves or chopped)
Preparation
    Combine sugars, milk, butter and salt.
    Cook gently, stirring frequently, until it comes to gentle boil.
    Cook on medium heat to 235\u00b0 on candy thermometer or soft ball stage, stirring.
    Remove from heat and cool to lukewarm.
    Stir in vanilla.
    Beat with long handled wooden spoon.
    Add pecans.
    Beat only until it begins to thicken.
    Quickly drop onto foil.
    Wrap in wax paper when cool or store in container.
