Honey Butter - cooking recipe

1/4 c. plus 2 Tbsp. butter, softened
2/3 c. honey
1/2 tsp. grated lemon rind
Preparation

Cream butter until light and fluffy; gradually add honey, beating well. Beat in lemon rind. Chill butter mixture several hours or overnight. Serve Honey Butter with muffins or toast. Yields 1 cup.
