Pineapple Chicken Stir-Fry - cooking recipe

Ingredients
    1/4 c. soy sauce
    2 Tbsp. cornstarch
    1/2 tsp. ginger
    1 Tbsp. oil
    2 chicken breasts, cut in 1-inch pieces
    1 clove garlic
    1 can pineapple chunks in own juice
    1 lb. fresh broccoli, cut
    1 carrot, sliced
    1 medium onion, sliced and separated into rings
    cooked rice
Preparation
    Combine first 3 ingredients.
    Heat oil in skillet for 1 minute.
    Add chicken and garlic.
    Cook 2 to 3 minutes.
    Add soy sauce mixture and cook until bubbles and thickens.
    Serve over rice.
    Makes 2 large servings or 4 small.
