London Broil Pinwheels - cooking recipe

Ingredients
    1 (2 lb.) beef flank steak
    1 large garlic clove, crushed
    1 c. dry sherry
    1/2 c. soy sauce
    seasoned meat tenderizer
    4 green onions (scallions)
    1/4 c. tomato paste
    8 slices Monterey Jack cheese
Preparation
    Pound flank steak with meat mallet until 1/2-inch thick. Sprinkle with tenderizer, garlic and green onions.
    Roll up, lengthwise, jelly-roll fashion.
    Cut roll into 8 slices and spear each slice on a skewer.
    Place skewers into a shallow dish.
    Mix sherry, soy sauce and tomato paste until smooth; pour over meat. Turn skewers and marinate at room temperature for 2 hours.
    Drain skewers and reserve marinade.
