Garlic-Parsley Potatoes - cooking recipe

Ingredients
    3 lb. red medium potatoes (unpeeled and sliced)
    1/4 c. olive oil
    8 cloves garlic, minced
    1 tsp. salt
    1/2 tsp. freshly ground pepper
    2 Tbsp. chopped parsley, divided
Preparation
    Mix first 5 ingredients in a bowl.
    Toss to coat well.
    Layer half in a lightly greased 12 x 8 x 2-inch baking dish.
    Sprinkle half of parsley over, then remaining potatoes.
    Cover; bake at 350\u00b0 for 45 minutes or until done.
    Uncover, sprinkle on remaining parsley and serve.
    Serves 8.
