Refrigerator Bran Muffins - cooking recipe
Ingredients

2 1/2 c. buttermilk
1/3 c. oil
2 eggs
3 c. bran flakes cereal with or without raisins
2 1/2 c. all-purpose flour
1 c. sugar
1 1/4 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
Preparation

Heat oven to 400\u00b0.
Line desired number of muffin cups with paper baking cups.
In large bowl, combine buttermilk, oil and eggs; beat well.
Lightly spoon flour into measuring cup; level off.
Add remaining ingredients, stirring just until moistened. Spoon batter into paper-lined muffin cups, filling 2/3 full. (Store remaining batter in tightly covered container in refrigerator for up to 4 weeks.)
Bake at 400\u00b0 for 20 to 25 minutes.
