Mock Crab Cakes - cooking recipe

Ingredients
    2 c. grated zucchini (about 2 large)
    2 large eggs, lightly beaten
    1 c. fine dry bread crumbs
    3 green onions, chopped
    2 to 3 tsp. Old Bay seasoning
    1 tsp. mayonnaise or salad dressing
    vegetable oil
Preparation
    Drain zucchini well, pressing between layers of paper towels. Combine zucchini and next 5 ingredients in a large bowl. Divide mixture into 8 portions, shaping each into a patty (mixture will be soft). Pour approximately 1/2-inch of oil
    into a large heavy skillet. Fry patties in hot oil over medium-high heat for 2 minutes on each side. Drain on paper towels. Serve with tartar sauce. Makes about 8 cakes. This is great way to use those extra summer zucchini.
