Rhubarb Crunch(From Cottage Grove'S Special Education Department) - cooking recipe
Ingredients

1 c. flour
5 Tbsp. powdered sugar
1/2 c. margarine
2 eggs
1 1/2 c. sugar
1/4 c. flour
3/4 tsp. baking powder
1/4 tsp. salt
2 c. cut up rhubarb
Preparation
-
Mix first 3 ingredients like pie crust.
Pat in a 9 x 9-inch pan.
Bake at 350\u00b0 for 15 minutes.
Beat eggs; add sugar. Continue beating.
Add dry ingredients and beat again.
Stir in rhubarb.
Spoon evenly over crust in pan.
Return to oven and bake for 30 minutes at 350\u00b0.
Serve when still warm.
Top with Cool Whip or ice cream if you wish.
