Fruitcake Cupcakes - cooking recipe
Ingredients

1 1/2 c. candied pineapple, chopped
2 c. candied cherries, chopped
1 box golden raisins
4 c. chopped pecans
1/2 c. all-purpose flour
1 pkg. yellow cake mix
4 eggs
1/2 c. orange juice
2 tsp. lemon extract
2 tsp. salt
1 Tbsp. oil
Preparation

Combine fruit and nuts and dredge with flour.
In a bowl, add the cake mix, 1 egg, orange juice, lemon extract and salt.
Mix 2 minutes.
Add remaining eggs, one at a time, beating well.
Blend batter into fruit.
Bake at 325\u00b0 for 30 to 40 minutes as standard size cupcakes (use paper liners).
Yields 40.
