Rice With Chicken And Cheese - cooking recipe

Ingredients
    1 onion
    1 Tbsp. fat
    1/2 tsp. salt
    2 c. chicken broth
    1/2 c. uncooked rice
    1 1/2 c. cooked chicken, diced
    1/2 c. cheese, cut up (Cheddar or any white cheese)
Preparation
    Chop onion and brown in fat.
    Add salt and broth.
    Heat to boiling and add rice.
    Cover pan and cook on low heat for 20 minutes.
    Turn heat off and let stand for 10 minutes, covered. Add chicken to rice; reheat.
    Sprinkle cheese on each serving. Makes 4 servings.
