Tortoni - cooking recipe

Ingredients
    3 eggs
    3/4 c. sugar
    dash of salt
    1/4 c. whole blanched almonds
    almond extract
    1 1/2 c. heavy cream
    12 maraschino cherries
    3/4 tsp. vanilla
Preparation
    Separate eggs.
    Put whites in small mixer bowl as separated. Refrigerate yolks.
    Let whites warm to room temperature 1 hour. Mix 1/4 cup water with sugar in 1-quart saucepan.
    Stir over low heat to dissolve.
    Boil, uncovered, without stirring to 236\u00b0 on candy thermometer.
