Moo Goo Gai Pen(Low-Fat) - cooking recipe

Ingredients
    1 whole chicken breast
    1/2 lb. mushrooms, sliced
    1/2 c. sliced water chestnuts
    1/2 lb. snow peas
    2 c. sliced Chinese cabbage
    rich chicken stock or bouillon
    cornstarch
    2 Tbsp. peanut oil
    add salt and pepper to taste
Preparation
    Skin, debone and slice chicken breast.
    Stir-fry snow peas in peanut oil for 2 minutes.
    Remove.
    Stir-fry mushrooms for 2 minutes.
    Remove.
    Stir-fry cabbage until slightly wilted. Remove.
    Stir-fry chicken until white.
    Add vegetables and chicken stock and thicken.
    Add salt and pepper to taste.
    Serve with rice.
    Serves 4.
