Colorful Corn Salad - cooking recipe

2 cans Niblets corn, drained
2 medium tomatoes (firm), seeded and diced
1 red pepper, diced
1 green pepper, diced
1 red onion, diced
1/2 c. Swiss cheese, diced
1/2 c. fresh Parmesan cheese, grated
1 small can diced green chiles
1/4 c. fresh cilantro, chopped or to taste
1/4 c. light olive oil
1 head cauliflower, broken into flowerets
4 celery stalks, sliced
6 carrots, sliced
2 green peppers, sliced
1 can artichoke hearts
1 (8 oz.) can button mushrooms
1 (7 oz.) jar cocktail onions
1 can pitted black olives
