Ingredients

2 large onions
1 c. milk
1 egg yolk, slightly beaten
1 Tbsp. Crisco, melted
2/3 c. flour
3/4 tsp. baking powder
1/2 tsp. salt
1 egg white
Crisco for shallow frying (any shortening will do)
Preparation

Peel onions; cut into 1/4-inch slices.
Separate into rings. Combine milk, egg yolk and melted shortening.
Combine flour, baking powder and salt.
Add milk mixture to dry ingredients; stir just until combined.
Beat egg white until stiff; fold into batter.
Heat shortening in skillet or pan to make 1 to 2 inches deep.
Dip onion rings in batter.
Fry in hot shortening about 3 minutes, turning once.
Drain on paper toweling.
