Savory Beef Stew - cooking recipe

Ingredients
    2 lb. stewing beef (1-inch cubes)
    1 1/2 c. chopped onion
    3 Tbsp. quick cooking tapioca
    1/2 c. celery, sliced
    1 bay leaf
    2 1/2 tsp. salt
    6 carrots, sliced
    1/4 c. oil
    1 (18 oz.) can tomatoes
    1 (10 oz.) can beef broth
    1 clove garlic, minced
    1 Tbsp. parsley flakes
    1/4 tsp. pepper
    3 medium potatoes, diced
Preparation
    Brown beef cubes on all sides in oil.
    Bring onion, tomatoes, beef broth, garlic, parsley, salt, pepper, bay leaf and tapioca to a boil; place beef cubes in 3-quart casserole.
    Pour above mixture over beef.
    Cover; bake in 350\u00b0 oven for 1 1/2 hours.
    Add carrots, potatoes and celery; continue baking 1 hour or until vegetables are tender.
    Serves 6 to 8.
