Salmon Fillets(Serves 4) - cooking recipe

Ingredients
    2 lb. salmon fillets
    4 Tbsp. Dijon mustard
    3 Tbsp. shallots, minced
    3/4 c. olive oil
    3 Tbsp. lemon juice
Preparation
    Rinse salmon.
    Pat dry.
    In flat, shallow dish, combine oil, mustard, lemon juice and shallots.
    Roll salmon in mixture.
    Coat both sides and refrigerate 1 to 2 hours.
    Place salmon on well oiled foil.
    Place on grill about 4 to 6 inches from hot coals. Cook 10 to 12 minutes per inch of thickness or until flesh turns opaque and flakes easily when tested with a fork.
