1/4 c. apple or orange juice
    1/2 c. low-fat buttermilk
    2 eggs whites
    1 Tbsp. oil
    3 Tbsp. honey
    1 1/2 c. unbleached white flour
    1/3 c. stone-ground white cornmeal
    2 tsp. baking powder
    1 tsp. baking soda
    1/4 c. brown sugar
    1/2 tsp. ground ginger
    1/4 tsp. ground cardamom
    2 ripe bananas, diced
Preparation
Combine raisins and apple juice in a large bowl and let stand for five minutes.
