Vegetable Cheese Bake - cooking recipe

Ingredients
    2 (10 oz. each) pkg. frozen mixed vegetables
    1/2 c. boiling water
    1/4 c. butter
    1/4 c. flour
    1 1/2 c. milk
    1/2 c. grated cheese (any kind)
    1/4 tsp. pepper and salt
    1/2 c. chopped onion
    1/4 c. chopped pimento
Preparation
    In a saucepan, combine vegetables and boiling water.
    Bring to a boil again.
    Cover and simmer 5 minutes.
    Drain well. Meanwhile, melt the butter in a saucepan.
    Blend in flour and cook for 1 minute.
    Gradually stir in milk; simmer, stirring, until smooth and thick.
    Add cheese and seasonings.
    Mix in vegetables, onion and pimento.
    Spread into buttered 1-quart casserole.
    Bake at 350\u00b0 for 30 minutes or until bubbly.
    Good served with pork.
