Ingredients

1 1/2 c. Minute rice
1 c. (4 oz.) shredded Mozzarella cheese
1 c. (4 oz.) sliced pepperoni, halved
1 large tomato, chopped
1 medium green pepper, cut in thin strips
2 mushrooms, sliced
6 pitted ripe olives, sliced
1 c. prepared Italian salad dressing, divided
Preparation

Prepare rice as directed on package.
Cool.
Toss rice, cheese, pepperoni, tomato, green pepper, mushrooms, olives and 1/4 cup of the dressing in a large bowl.
Refrigerate.
Toss with remaining 1/2 cup dressing before serving.
