Vegetable Pilaf - cooking recipe

Ingredients
    1 c. rice (uncooked)
    2 coils fideo (pasta)
    2 c. chicken broth
    1 carrot, grated
    1/2 c. frozen peas
    1 Tbsp. olive oil
    1/2 c. red pepper, sliced thin
    1/4 c. chopped onion
    1/2 c. sliced almonds
Preparation
    Brown rice and crumbled fideo in oil.
    Add vegetables and broth.
    Cover and cook over medium heat until liquid is absorbed (about 20 minutes).
    Sprinkle almonds on top.
    Serves 4 to 6.
