Rio Vista Balls - cooking recipe

6 chopped hard-boiled eggs
2 slices crumbled crisp bacon
1 tsp. minced onion
1/2 tsp. salt
speck pepper
1/4 tsp. prepared mustard
1/4 c. mayonnaise
2/3 c. grated process Cheddar cheese
1 whole Gouda cheese
1 c. sour cream
1/3 c. white table wine or chicken broth
2 tsp. grated onion
1/4 c. finely chopped green pepper
1/4 c. finely chopped pimiento
seasoned salt to taste
Preparation

Cut a 1/2 to 1-inch thick slice from top of cheese.
Using a spoon, scoop out cheese, leaving a firm shell.
Spread cheese very fine and measure.
Should yield 1 quart.
Combine cheese with sour cream, wine and grated onion.
Beat until fluffy and well blended. Stir in green pepper, pimiento and seasoned salt.
Pile lightly back into the cheese shell.
Makes 3 1/2 cups.
