Ingredients

2 envelopes unflavored gelatin
1 c. sugar, divided
1/4 tsp. salt
3 Tbsp. Irish cream gourmet coffee
8 eggs, separated
2 c. water
2 tsp. vanilla
Preparation

Mix gelatin, 1/2 cup sugar, salt and coffee in the top of a double boiler.
Beat egg yolks and water together.
Add gelatin mixture.
Cook over boiling water, stirring constantly until gelatin is dissolved.
Remove from heat; stir in vanilla.
Beat egg whites until stiff.
Beat in remaining sugar.
Fold into gelatin mixture.
Top with whipped cream, when chilled.
