Ingredients

1 2/3 c. sugar
2/3 c. butter
2 eggs
1/2 c. crushed pineapple (canned in syrup or in natural juice)
2 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. lemon extract
Preparation

Mix sugar, butter, eggs and pineapple (with juice), flour, baking soda, salt and lemon extract.
Drop by teaspoonfuls on ungreased baking sheet.
Bake at 350 for 12-15 minutes or until lightly brown.
Let stand a few seconds before removing to cooling racks.
