Tapioca Pudding - cooking recipe

Ingredients
    2 c. skim milk
    2 Tbsp. quick-cooking tapioca
    non-calorie liquid sweetener equal to 5 Tbsp. sugar
    1/4 tsp. salt
    2 slightly beaten egg yolks
    1/2 tsp. vanilla
    2 egg whites
Preparation
    Combine skim milk, tapioca, sweetener and salt; let stand 5 minutes.
    Add beaten egg yolks.
    Bring to a boil over medium heat, stirring constantly.
    Remove from heat (mixture will be thin).
    Add vanilla.
    Beat egg whites to stiff peaks.
    Gradually fold in hot mixture.
    Chill.
    Serves 8.
