Ingredients

1 lb. beef (top round steak)
1 egg white
1 Tbsp. cornstarch
1 tsp. dry sherry
1/2 tsp. each salt and pepper
several dashes bottled hot sauce
1 Tbsp. soy sauce
1 Tbsp. catsup
1 tsp. red wine vinegar
1/2 tsp. sugar
2 Tbsp. cooking oil
1 clove garlic, minced
3/4 lb. fresh asparagus, cut into 1-inch lengths (2 c.)
1 c. thinly sliced fresh mushrooms
1/4 c. thinly sliced scallions
Preparation

Partially
freeze
meat,
then thinly slice meat across the grain into bite-size strips.
In a bowl, combine meat with egg white,
cornstarch,
sherry,
salt, pepper and hot sauce, working seasoning
into
meat
with
your
hands.
Set aside. Combine soy,
catsup, vinegar and sugar and set aside.
