Sweet Potato Puff - cooking recipe

Ingredients

6 large sweet potatoes, pared
1/2 stick butter plus additional
2 eggs, well beaten
1/3 c. sugar
2 tsp. baking powder
1 tsp. salt
1/4 c. orange juice
1/2 c. crushed pineapple

Preparation

Boil sweet potatoes until tender.
Mash and add remaining ingredients except marshmallows.
Beat well and place in a buttered casserole or glass baking dish.
Dot with additional butter and bake in a 350\u00b0 oven until very lightly browned, about 30 minutes.
Remove from oven and gently press marshmallows into top.
Return to oven until marshmallows are lightly browned. Makes 6 servings.
