Mimi'S Zucchini - cooking recipe
Ingredients

3 or 4 zucchini
1/2 c. onion, chopped finely
2 Tbsp. margarine
1 to 1 1/2 c. grated sharp cheese
Italian flavored bread crumbs
margarine
Preparation

Wash and slice zucchini not too thinly.
Add very little water and salt.
Parboil on low heat until tender.
Drain well.
Put back into pot.
Add margarine and onions.
Simmer until onions are soft. Put in 12 x 8 x 2-inch Pyrex casserole.
Add grated cheese and bread crumbs.
Dot with margarine.
Bake at 350\u00b0 for 20 minutes. Serves 8.
