Light Chocolate Cupcakes - cooking recipe
Ingredients

6 Tbsp. soy margarine
1 c. sugar
1 1/4 c. flour
1/3 c. cocoa
1 tsp. baking soda
1 c. low-fat milk
1/2 tsp. vanilla extract
powdered sugar
dash of salt
Preparation

Heat oven to 350\u00b0.
Line muffin pans with paper bake cups. Melt margarine, remove from heat and stir in sugar.
Combine flour, cocoa, baking soda and dash of salt; add alternately with milk and vanilla to mixture in saucepan.
Beat until well blended. Spoon into bake cups.
Bake 18 to 20 minutes.
Cool on wire rack, sift powdered sugar over top.
Yields 18 cupcakes.
