Zucchini Oats Health Crunchies - cooking recipe

Ingredients
    1/2 c. butter
    1 egg
    1 tsp. baking soda
    1 c. large oats
    1/2 c. walnuts, chopped
    1/2 c. coconut (optional)
    1/2 c. honey
    2 c. whole wheat flour
    1 Tbsp. cinnamon
    1 c. zucchini (if frozen, drain well)
    1/2 c. raisins
Preparation
    Cream butter and honey. Add beaten egg.
    Sift dry ingredients and add to creamed mixture.
    Stir in oats and shredded zucchini, raisins and walnuts (coconut too if desired).
    Drop onto ungreased cookie sheet and bake at 375\u00b0 for 15 minutes.
    Yields approximately 4 1/2 dozen.
