Greek Black-Eyed Pea Salad - cooking recipe

Ingredients
    3 c. black-eyed peas, cooked
    1/2 c. yellow or red bell pepper, diced
    1/2 c. scallions, diced
    1 clove garlic, crushed
    1/2 tsp. dried oregano
    3 Tbsp. extra virgin olive oil
    4 Tbsp. cider vinegar
    3 tsp. lemon juice
    4 tsp. fresh parsley, minced
    1/4 tsp. salt or Spike with sea salt from health food store (Spike is made up of mixed herbs)
Preparation
    Combine all ingredients in a large bowl.
    Marinate 6 to 8 hours.
    Refrigerate, stirring occasionally.
