Chicken Rice Italian - cooking recipe

Ingredients
    3 lb. broiler-fryer, cut up
    salt
    1 tsp. oregano
    1 (15 oz.) can tomato sauce
    1 c. converted rice
    2 medium zucchini, coarsely chopped (2 c.)
    1 1/3 c. water
    1 tsp. salt
    shredded Mozzarella
Preparation
    Preheat oven to 375\u00b0.
    Remove excess fat from chicken.
    Season with salt and oregano.
    Remove and reserve 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish.
    Stir well.
    Arrange chicken over rice mixture.
    Cover tightly with foil and bake 1 hour.
    Spoon reserved sauce over chicken.
    Sprinkle with cheese.
    Return to oven for 2 to 3 minutes to melt cheese.
