potatoes
green coloring
pineapple slices
lemon slices
Hollandaise sauce
Preparation

Steam red snappers and bone them.
Surround them by steamed potatoes.
Trim with cold pineapple rings, tinted green with coloring.
Serve with lemon slices and a rich Hollandaise sauce.
