Foiled Orange Roughy - cooking recipe
Ingredients

2 orange roughy fillets, thawed
1 large potato, peeled and sliced thin
1 large carrot, peeled and sliced
1/2 c. green beans
6 slices onion
1 Tbsp. margarine
salt and pepper
Preparation

Place each fillet on a piece of aluminum foil.
Put potatoes into microwave-safe dish (covered) and cook on High for 3 to 5 minutes.
Then top each fillet with 1/2 of the potatoes, carrots, green beans, onion and margarine.
Add salt and pepper to taste. Fold the foil into a packet, covering all ingredients and bake for 20 to 25 minutes at 400\u00b0.
Test fish with fork to make sure it is cooked thoroughly.
