Polet Etouffee(Smothered Chicken) - cooking recipe

Ingredients
    4 to 5 lb. roasting hen (whole)
    1 c. sunflower oil
    1 c. onion, chopped
    1/8 c. red bell pepper, chopped
    1/8 c. green bell pepper, chopped
    1 tsp. fresh parsley, chopped
    1 Tbsp. Worcestershire sauce
    1/4 tsp. bitters (optional)
    Tabasco to taste
    1/8 c. garlic
    3 tsp. salt
    carrots (as needed for color)
    1/8 c. chopped celery
Preparation
    Pour oil into deep pot (crock-pot) on low-medium heat.
    Wash meat and put into hot oil.
    Cover meat with onions, then peppers, parsley, celery, Worcestershire and bitters.
    Be sure ingredients get inside chicken also.
    Sprinkle Tabasco around on meat.
    Add garlic, then salt.
