Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    1 tsp. salt
    1 stick margarine, melted
    1 1/2 c. milk
    4 eggs
    1/2 tsp. pepper
    1 1/2 c. grated sharp cheese
    1 medium onion
Preparation
    Cook eggplant until mushy and drain.
    Add all ingredients except 1/2 cup of cheese and 1/2 cup of cracker crumbs and small amount of melted margarine.
    Mix well, pour into baking dish. Sprinkle with reserved cheese, crumbs and margarine.
    Bake at 350\u00b0 for 25 to 30 minutes.
    Yields 6 to 8 servings.
