Sugar-Free Blueberry Muffins - cooking recipe
Ingredients

2 c. flour
4 tsp. baking powder
1/2 tsp. salt
6 packets Sweet 'N Low
1 egg, beaten
1 c. skim milk or low-fat
1/2 c. margarine
1 c. unsweetened blueberries
Preparation

Preheat oven to 425\u00b0.
Grease 12 muffin pan cups with nonstick cooking spray.
In large bowl, sift flour, baking powder, salt and sweetener.
In small bowl, beat egg, milk and margarine with fork or whisk.
Add egg mixture and blueberries to flour mixture.
Stir just until flour is moistened.
Spoon batter in cups.
Bake 15 to 20 minutes or until toothpick is clean.
One muffin = 1/2 bread and 1/2 fat.
Calories - 117; 2 gm fat.
