Batter-Dipped Chicken - cooking recipe

Ingredients
    oil for deep frying
    1 c. instant pancake mix
    3/4 c. milk
    garlic powder
    salt and pepper
    3 whole chicken breasts, skinned, boned and cut into 1-inch cubes
    hot mustard or sweet and sour sauce
Preparation
    Heat oil in deep fryer to 370\u00b0.
    Combine pancake mix and milk in shallow dish.
    Season with garlic powder, salt and pepper.
    Dip chicken pieces in batter, coat well.
    Fry in batches until golden, about 1 minute.
    Drain on paper towels.
    Serve with hot mustard or sweet and sour sauce.
    Great as an appetizer.
