Twice Baked Potatoes - cooking recipe
Ingredients

6 medium Idahos
1 pt. sour cream
1/2 c. frozen chives or chopped green onion
1 c. Cheddar cheese, shredded
1 stick butter
salt and pepper to taste
Parmesan cheese
Preparation

Bake potatoes until done in 350\u00b0 oven.
Cut in half.
Scoop out both halves.
Reserve the skin.
Whip the potatoes in bowl with salt and pepper to taste.
When smooth, add sour cream, chives, cheese and butter.
Whip until blended.
Spoon mixture back into skins.
Sprinkle with a little Parmesan cheese.
May be held in refrigerator for 24 hours or wrapped for freezing.
To serve, bake at 325\u00b0 for 30 minutes or until golden.
