Chicken Breasts In Wine Mushroom-Rice Pilaf - cooking recipe

Ingredients
    3 large chicken breasts, boned, skinned and halved
    salt and pepper
    1 c. vermouth
    1 tsp. tarragon
    2 cloves garlic
    3 to 4 Tbsp. Parmesan
    paprika
    2 c. rice
    1 tsp. salt
    1/2 lb. mushrooms, sliced
    6 large scallions (white part only)
    1 stick butter or margarine
    2 c. chicken broth
Preparation
    Season both sides of chicken pieces with salt and pepper.
    Mix vermouth, tarragon and garlic.
    Add chicken.
    Marinate at room temperature 1 hour, turning occasionally.
    Fold chicken pieces in half lengthwise.
    Place in greased 10 x 6 x 2-inch dish.
    Pour marinade on top.
    Sprinkle with cheese and paprika.
    Bake, uncovered, in preheated 350\u00b0 oven for 30 to 35 minutes.
    Serve on Mushroom-Rice Pilaf.
